INGREDIENTS
2 cups flour
1⁄2 cup sugar
21⁄2 tsp baking powder 2 tsp instant espresso powder
1⁄2 tsp cinnamon
1⁄2 tsp salt
1 egg
1 cup milk
1⁄2 cup butter, melted 1 tsp vanilla
3⁄4 cup chocolate chips
METHOD
1. Preheat oven to 200°C and grease muffin tins or line with paper baking cups.
2. Sift all dry ingredients together into a bowl, then make a well in the centre of the mixture.
3. Beat the egg together with the milk and the melted butter, add the vanilla, then add to the dry ingredients along with the chocolate chips and mix until just moistened.
4. Now spoon butter into prepared muffin cups, filling each 2⁄3 full.
5. Bake until just done - approximately 20 minutes.
